“Kunitachi Pasta Factory” is an Italian restaurant located in a quiet back alley, a four-minute walk from the south exit of JR Kunitachi Station.
This restaurant allows diners to choose their own pasta sauce and noodles, combining them to create their own combinations.
Owner Takeshi Yanagisawa, who previously worked in the food service industry, learned about the high number of people with allergies, and is committed to creating a restaurant that caters to a diverse range of patrons.

The interior is spacious, with ample seating.
The interior is like a cafe, allowing customers to enjoy a relaxing meal.
90% of the clientele is female, and customers of all ages frequent the restaurant.
With many universities nearby, the restaurant is popular with both local residents and students.

The kitchen is visible from the dining area.
The open kitchen allows customers to watch the chefs in action.
Seeing the chefs’ faces is a very reassuring experience.

Sauce & Pasta Menu
Choose your pasta sauce from our menu. The base sauce changes every six months, while the Today’s Recommendation changes monthly.
Today’s Recommendation features a variety of seasonal ingredients.
Owner Yanagisawa is also involved in sourcing ingredients, working directly with producers to carefully select ingredients that preserve their natural sweetness and unique characteristics.
You can choose from six types of pasta noodles, and all of the wheat flour, rice flour, and brown rice flour are domestically produced.
The rice flour and brown rice flour are produced in a dedicated factory, making them 100% gluten-free, making them safe for those with allergies.
If you’re unsure about which sauce to pair with your meal, the sauce menu lists the types of pasta that go well with each sauce.
Finally, you can choose the amount of pasta and the salad and dessert included in the set. The appeal is that you can customize everything to suit your mood that day!

Today’s Recommendation for March
Among our extensive menu, the meat sauce pasta is a favorite among men.
Normally, you would add Tabasco to add a little spiciness, but we don’t serve Tabasco here.
Because the acidity of Tabasco intensifies the sourness of the tomatoes, we serve our original blend of shichimi instead.
Shichimi is a blend of spices such as coriander seeds, cinnamon, and cardamom.
The refreshing, spicy aroma adds a spiciness to the rich meat sauce, making it even more appetizing.
This meat sauce is made with noodles made from domestic wheat flour and is served from a food truck called “Macaroni Kitchen.”
You might also see it in Tokyo, Chiba, and Kanagawa.
A menu made with carefully selected ingredients!
This time, I chose the most popular dish from the extensive menu: “Rich Shrimp Miso and Shrimp Cream Sauce,” paired with “Brown Rice Fettuccine” and a salad set.
When ordering, the staff carefully checks for allergies and dislikes, reflecting the owner’s desire to “serve a wide variety of customers.”

Salad Set
The salad was so large it could easily fill both hands. It’s a hearty meal, and it’s great for getting plenty of vegetables, which are often lacking in our diets.

Most Popular: Rich Shrimp Miso and Shrimp Cream Sauce
The secret to its deliciousness is the handmade “Rich Shrimp Miso,” which is slowly simmered to maximize the umami flavor.
You can enjoy the shrimp in every aspect: aroma, taste, and texture.
This gluten-free pasta is made with brown rice flour, and the aroma of brown rice matches perfectly with the rich shrimp miso cream sauce.
It also had a chewier texture than regular pasta, making it very satisfying to eat.
The menu is so extensive that you’ll want to return again and again to this restaurant.
