A guilt-free noodle shop that offers both healthy and satisfying meals

Located a one-minute walk from JR Suidobashi Station, TSUKEMEN Zuppa opened in September 2021. Enjoy meat- and fish-free tsukemen, ramen, and soy milk dandan noodles. A sign at the entrance reads, “The soup and toppings are all vegetable-based, so you can drink every last drop with zero guilt.” Guilt-free noodle dishes are a great option for lunch, especially in the area with its many bars and bars.

Purchase your meal ticket from the ticket machine at the entrance and enter the restaurant. Vegan options are available (soy milk dandan noodles are also available without the five pungent vegetables) by requesting this when handing over your ticket. The restaurant has a simple design with seven counter seats. Jackets can be hung on the wall hangers.

During lunchtime, many men in their 40s and 50s arrive after sampling all the delicious food. In the evenings, many foreign visitors also visit. If you don’t like crowds, we recommend visiting early in the evening, between 4 and 5 p.m.

The soup is made with simmered vegetables and the whole wheat noodles are very satisfying!

Manager Higashide creates guilt-free tsukemen and ramen. While he’s not a strict vegetarian or vegan, he doesn’t eat much meat or fish on a regular basis. He especially avoids meat. When asked why, Higashide said, “Since I stopped eating meat, I’ve felt better and more at ease.” He says he avoids meat as a way to stay healthy while standing all day. The noodles and side dishes are beautifully presented! Previously working at an Italian restaurant, Higashide’s attention to detail is evident in his presentation.

The soup base used for the tsukemen and ramen is made without any fish or meat, but by simmering various vegetables. This tsukemen is visually appealing and allows you to savor the umami of the vegetables. The noodles are made from whole wheat flour, with a firm texture and satisfying texture. The tsukemen is topped with “oeuf mayo.” oeuf is French for egg. The vegan version does not include the ufu mayonnaise.

This is a vegan version of our soy milk dandan noodles. These soy milk dandan noodles can also be made without the five pungent vegetables. The soup for these soy milk dandan noodles is made with 100% soy milk. It’s topped with a colorful herb salad, bok choy, and soy meat for added flavor. The slightly spicy flavor pairs well with the mellow soy milk broth, leaving it light and not heavy even as you sip. Even though the soup and ingredients are meat-free or fish-free, the rich soy milk broth and hearty whole-wheat noodles leave you feeling satisfied.

Since we’re located near a university, we even offer a student support set menu. This super-value set menu includes a “Soy Meat Soy Sauce Ramen” and a “Soy Meat Ufu Mayonnaise Bowl.” What a student privilege! I’m so jealous!

They also serve alcohol, offering highballs and medium-sized bottles of Heartland beer. You can enjoy a “Vegetable Set” with toppings before tucking into tsukemen or ramen (they also offer a snack set). Manager Higashide, who has a wide range of experience, manages this restaurant, and his gentle demeanor makes for a heartwarming conversation. His personality truly embodies the concept of “healthy tsukemen and ramen.”

The biggest surprise was the feeling after I finished eating. The soy milk dandan noodles were filling, but they didn’t feel heavy! I love their ramen and noodle dishes, but I’m always concerned about feeling heavy after eating. Surprisingly, it didn’t feel heavy on the stomach and was light, and I couldn’t help but walk home with a smile on my face. Even if you’re not vegetarian or vegan, why not give it a try?
