Completed doctoral course at Sugiyama Jogakuen University Graduate School (Department of Human Life Science). After experiencing nutritional guidance for various diseases at general hospitals and clinics, she felt that it was important to prevent diseases, and learned phytotherapy, molecular matching nutrition medicine, holistic beauty theory, etc., and focused on disease prevention activities.
Her specialties are prevention of metabolic syndrome, improvement of pre-illness/indefinite complaints, and nutritional management by life stage.
Usually she mainly focuses on lecturers (universities, civic lectures, seminars), individual nutrition guidance, and specific health guidance.
Hobbies include visiting cafes/restaurants looking for healthy food, making soap and skin care cosmetics, and making beeswax wrap. While having fun, she is trying to gradually incorporate a sustainable lifestyle.
Old folk house cafe and restaurant that is a new sightseeing spot in Akiu hot springs@ Okuzasiki, Sendai
Akiusha is an old folk house cafe and restaurant located in the Akiu hot spring town, opened in July 2018 at Okuzasiki, Sendai.
It is a vintage and modern space renovated from a 160-year-old folk house. You can feel the Scandinavian style interior(* 1).

There are table seats and tatami mat seats in the shop. If you visit with children, the tatami room is convenient.
Not only can you enjoy your meal, but you can also enjoy walking around Akiusha and taking pictures or going out to the garden to play in nature!
There are also many photogenic spots for SNS posts such as instagram.
In the garden, there are wild cherry trees and ginkgo trees surrounding the lush lawn. Also, there are planted seasonal flowers and herbs in the corridor with Akiu stone.
Some couples held a wedding party in the garden. It is also a place to enjoy art exhibitions.
A “town with a history of 1500 years” that conveys the culture of good and old Satoyama
Nowadays, organic vegetables are attracting attention. In fact, Akiu has been adopting organic farming for more than 30 years, which makes it a predecessor of the vegetable fad.
Also, Akiu has a good and old Satoyama culture where nature and people coexist.
Mr. Chiba who is the representative director said, “From the Meiji era to the Taisho era, there was Akiu Onsen station in this place, the station front was full of people, and the street was crowded with tourists.
I want the region to get energized again, as it was in the past. So, we regenerated the old folk house and opened the Akiusha with the desire to make Akiu crowded again. Then, it genuinely started as a base for town development that creates new value in the region. ”
And now, various people from local veterans to young people are gathering (called Akiu Brand Makers), and they are working on creative activities with excitement.
When Mr. Chiba said “I’m only doing fun things” with a bright smile, I felt that Akiusha would liven up to the Akiu area in a way that suits the new era.
Akiusha can also be used as a learning center for cultural experiences (herbarium making, dried persimmon making, calligraphy, etc.). Also, the events that match the four seasons are attractive as well.

Throughout the year, there will be a collaboration event between Akiusha and Akiu Winery / Date Masamune Warlords. “Date’s Terrorage (* 2)” in 2020 is “Falconry and Jibie!”

“Hatake-no Akiusha bowl using soybean meat” for vegetarian and vegan
The innovative idea of using a “scoop” to put “soil” on top of the food as if you were plowing a field is very typical of the nature-experiencing Akiu-sha, and the “Hatake no Akiu-sha Bowl with Soy Meat” is a vegetarian and vegan menu item.
The taco rice, which looks like an actual field, is made with finely ground soybean meat instead of ground meat. The soy meat soaked in the spicy taco rice seasoning had almost the same texture as ground meat, and is very tasty. The rice cereal, cheese, avocado, and tomatoes are included in the bowl, but if you ask for their removal when ordering, you can have it vegan without the dairy products such as cheese.
The “Field Akiu Bowl” is served with kale and Swiss chard grown in the clean water of Mt. Kurikomayama. You will put taco rice over these leafy vegetables and enjoy them.
For beverages, in addition to coffee and tea, there is a selection of homemade shiso juice (limited time only), Yuki Orchard Sea Breeze apple juice, Ono Farm peach tea, and sparkling juice (berry & berry, elderflower).
There are also many other attractive menu items. The food is prepared by Chef Watanabe, who has studied at a famous French restaurant. His motto is “enriching the community with my cuisine,” and he is constantly working on the local food through menu development and cooking.
