“In the 13 years I have been involved in nutrition education classes and menu planning at elementary and junior high schools. Through such experience, I have learned that there are people who need detailed information about food and nutrition in their daily lives, such as those with allergies or in sports.
I want to convey correct information that suits each individual, in an easy-to-understand manner. I want them to be happy with the information.”
After leaving her job for family reasons, she became a certified sports dietitian. Currently, she provides nutritional support for adult baseball teams and individuals.
An old Japanese style house revovated into a cafe that is particular about natural cultivation
Hatakezoku is an old Japanese style house revovated into a cafe in Obu City, which is adjacent to the south of Nagoya City.
Hatakezoku concept is to “create a place that connects with agriculture through food. So everyone can feel the beauty of nature nearby.”
With these concepts, the cafe jointly created by two farmers.
The most important thing is “natural cultivation”.
They use vegetables grown without using any pesticides or fertilizers. The cultivation method is extremely difficult and time-consuming, and the vegetables grown are full of rich and tasty flavors.
Wholesome dishes of freshly picked vegetables are thier speciality which is feasible as the cafe is directly managed by farmers.
You will feel relaxed inside the renovated Japanese style house with wooden interior.
From the seating area, you can see that each dish is carefully finished.
Sake brewery lunch 1380 yen (tax included) Includes naturally cultivated rice and thier own fermented miso soup.
You can choose from meat and vegetable dishes as a main dish. There is a sufficient amount of protein in chickpeas even if you choose a vegetable dish.
Sake lees (leftovers from sake brewing) amazake veggie hoikoro uses konjac instead of meat. Yu can enjoy the mild taste of sake lees and amazake.
Freshly deep-fried falafel (Middle Eastern chickpea croquette) is crispy on the outside! The inside is fluffy! You can enjoy the texture. It’s spicy but not too hot, and it’s as satisfying as a meat dish.
The cabbage and carrot sauerkraut is sour and goes great with fried foods.
Commitment to fermentation
Miso and doburoku are also made on the premises.
Fermentation helps to
・ Bring out the flavor of food and increase its nutritional value.
・ Improve the preservation of food.
・ Improve digestive system.
Miso, doburoku, and sake lees, which are naturally cultivated crops and have added benefits of fermentation, are used in cooking.
・ Rumored Doburoku cheesecake (+300 yen)
・ Marinated new onions and spring-picked wakame seaweed
・ Taro simmered in coconut
From the list, I chose the rumored Doburoku cheesecake.
The rumored Doburoku cheesecake is an exquisite combination of cream cheese and Doburoku!
The attached cream is a combination of sake lees and miso, a double fermented food. This is a nice touch.
It is a fermented lemon drink. A refreshing drink made by mild sweet and sour syrup with carbonated water.
Eat doburoku
As the lunch name says, this cafe has a sake brewery.
In the rice fields of Obu City, where the Doburoku culture has continued for 500 years, rice grown without using pesticides or fertilizers has been used to make Doburoku over a long period of time.
Promoted by Hatakezoku, Obu City has been certified as a “Doburoku Special Zone”, which is one of the national reforms.
The only ingredients are “water” and “rice”. (No yeast is added, and the yeast that originally floats in the brewery is a natural yeast.)
Since it is made from natural yeast, it is a once-in-a-lifetime sake that you can enjoy the slightly different tastes each time you try it.
Rice polishing rate 90%. The same rice polishing rate as the white rice. Enjoy the original taste of rice as you eat it. So, “Eat Doburoku”.
Doburoku is a sake that does not go through the “straining process” to separate the mash produced by alcoholic fermentation into sake lees and sake.
In other words, the appealing point is that you can get both the beneficial characteristics of sake lees and sake.
Sake lees contain resistance protein (= a protein that is difficult to digest and helps remove fat from the body).
Sake is rich in α-EG (= increases collagen production in the skin and helps keep the skin healthy), B vitamins, and amino acids.
“Eat Doburoku” is a superfood that can support beautiful skin and a weight loss.
It’s not as sweet as amazake, and it’s a little fizzy. Easy to drink even for those who don’t drink sake.
It is also rich in amino acids, which are considered to be umami, and are recommended for use in cooking!
