Founded “VegeProject Japan(NPO)” when she was a student. From then, she introduced a veg-menu to the student cafeteria of Kyoto University.
She is currently working with universities, companies, restaurants and municipalities to expand vegan and vegetarian options.
Also active as teacher/advertiser of vegetarian vegans. Interviews with well-known vegetarians Paul McCartney and Colin Campbell.
A natural vegan cafe and restaurant featuring enzymes with the concept of “Be beautiful from inside the body”
KO-SO CAFE BIORISE is a natural vegan cafe located four-minute walk from Ebisu Station. The interior, which is based on green color, has a casual yet relaxing atmosphere.
As they do not use any animal ingredients or white sugar, not only vegetarians or vegans but also people with high health concious can enjoy their meals. All menus use ingredients and fermented foods that are particular about the season and production area. Also, they use carefully selected organic vegetables that contain various enzymes.
KO-SO CAFE pays attention to the importance of “enzymes,” which are the basis of vitality and based on the concept of “Be beautiful from inside of the body.”
From this reason, salad dressings using fermented stock solution and fermented seasonings such as salt and soy sause that marinated rice malt(called KO-JI) are all homemade.
No additives are used, so it is safe for those who are concerned about additives.
In addition, they have taken vegan certification by NPO Veggie Project Japan and halal certification by Malaysian Halal Corporation. This is a restaurant where vegetarians, vegans, and Muslims can enjoy meals with peace of mind.
There are many kinds of food menu that is used homemade fermented seasonings! Excellent and satisfying food.
They have a wide variety of menus so that everyone, not just vegetarians or vegans, can enjoy their meals with satisfaction.
The plate menu, in which soybean meat is deeply seasoned with homemade seasonings, has an impression as if you were eating meat dishes.
Pizza is made from rice flour and buckwheat flour. It has a chewy texture and great roasted smell. It is also good point that this charcoal pizza is gluten-free.
Other gluten-free dishes are easy to find for those who are looking for them because the menu has an easy-to-see display.
There is also a limited menu that changes every month, and a new menu is being considered by the staffs.
That is why this is a restaurant that you will never get tired of, no matter how many times you go. You can be excited about what is going on this month!
At dinner, not only food but also alcoholic drinks are served. In addition to the standard draft beer and wine, they also have thier own sake that uses enzyme and roasted brown rice.
Inside of the restaurant is well-prepared for infection control, so you can eat and drink inside the store without being worried, but you can also use the plenty of take-away menu.
The highly recommended menu is Pancake. It is sure be satisfied with the finest soy milk whipped cream on it.
Among the many attractive menus, the highly recommended menu is “Deluxe Brown Pancakes.” According to the restaurant, it is the most popular menu in the store.
There are two reason for recommending this pancake.
The first reason is soy milk whipped cream. This is the finest soymilk whipped cream created through trial and error. Of course, dairy products are not used. But, you can enjoy a creamy texture that is similar to normal whipped cream. Also, because it is made from soy milk, it is not too heavy and is very easy to eat.
The second reason is the pancake dough. It is made from roasted brown rice flour and buckwheat flour, which include rich amount of dietary fiber.
All in all, the texture is very chewy and fluffy and also the roasted smell is awesome! In addition, It goes well with soy milk whipped cream.
Although it has a enough amount of volume, it is a very satisfying dish that can be easily eaten by one person with its gentle sweetness.
They are also particular about the drink menu as well. Brown tea made from roasted brown rice flour is a non-caffeine, gastrointestinal-friendly drink, so that is good for your body. The smoothie with plenty of fruits and vegetables contains a homemade fermented drink made by fermenting 88 kinds of ingredients. When you have no appetite, it is the best drink you can get!
