She is currently working with universities, companies, restaurants and municipalities to expand vegan and vegetarian options.

A coffee shop to relax with the earth
In July 2020, a plant-based coffee shop was born from Japan’s national coffee chain, Komeda Coffee. The name of the new coffee shop in Higashi-Ginza is Komeda is ▭. All of the menu items are plant-based, which means that the food is friendly to the environment, animals, and our bodies.
KOMEDA is ▭ has a desire to “create the time that customers spend at Komeda and provide a relaxing experience that suits each and every one of them.” Please try to apply the feelings you feel at Komeda to ▭ (blank space). Relaxing, tasty, fun…whatever you feel. What would you like to put in it?
The restaurant’s name, Komeda is ▭, also means that they have a wide variety of rice and soybean dishes. For example, the popular rice pancakes are made with a blend of wheat and rice flours. The patty used for the hamburger (Beppin Burger) is Komeda’s original soybean patty made without using meat or fish. All of the dishes made with special ingredients and carefully selected seasonings are exquisite.
The secret behind the relaxing space
Since its establishment, Komeda Coffee has been committed to providing customers with “the best place to relax.” Visiting a café with friends or family, chatting, and drinking coffee while relaxing. Komeda is ▭, is a sustainable café that was born out of the desire to ensure that such a normal everyday life will continue in the future.
As soon as you enter the store, you will see a bar counter on your left. Here, you can enjoy coffee or alcohol drinks depending on the time of day, and those who come alone can relax.
The center of the store is a spacious seating area. The interior is decorated in green and brown, leading us to a space where we can feel nature. Towards the back, there is a space where you can relax and enjoy the view of the Ginza district. The space is also equipped with a charging area and Wi-Fi. You can forget about the daily grind and spend some time in this spacious place of relaxation.

Beppin Burger (Tartar Wasabi)
This hamburger is a fist-sized bun sandwiched with fried fish, tomato, nori, cabbage, and fries. What amazes me is this fried fish. The fried fish has such an amazing texture that you’ll wonder if it is a real fish. The wasabi tartar is not too spicy, so even children can enjoy it.
Chunky sio maple
Komeda is ▭ proud of its pancakes made with a blend of wheat flour and Japanese rice flour. The pancakes are made with the finest ingredients, such as beet sugar and soy milk, as well as rice jelly made from rice and water, which gives the pancakes a sticky texture. The balance between the sweet soy milk cream and the sio maple is exquisite.
Tofu fritters with three different sauces
You can enjoy the tofu fritters with three different kinds of unique sauces. The fritters are crunchy on the outside and soft on the inside, and are loved by everyone from children to the elderly. There are three kinds of sauces: Negishio, Tartar, and Miso powder, all of which do not interfere with the taste of the tofu fritters and enhance the taste of the ingredients to the maximum level.
Soy milk coffee
Sustainable coffee specially made by KOMEDA is ▭. This is a unique coffee with soy milk cream on top of a 100% Arabica Komeda blend. The light whipped soy milk is a perfect match for the coffee. Please enjoy a special cup that is different from the usual.
