After graduating from the management nutritionist training process at Kyoto Prefectural University, she engaged in product planning at food manufacturing company and food company.
She also contributed to the development of new “limited” products of pasta, sandwiches, and side dish bread to a certain convenience store.
In between job changes, she goes to school as a food coordinator, takes pictures of food coordinators and stylist teachers, and also experiences cooking class assistants.
After retiring from pregnancy, she studied health and body again. Now she is raising a 5-year-old twin boy (using natural remedies without relying on medicine as much as possible), while practicing child-rearing with high immunity by incorporating something close to the above.
She also presides over a cooking class for rice cooked at home (sometimes on a business trip) and mainly holds additive-free sprinkle furikake courses and fasting courses. She teaches how to eat and serve as well. In addition, she is currently helping people to prepare their body, as an osteopathic manipulative practitioner.
A hideaway, sustainable, and fashionable hamburger shop
NICE plant-based cafe is located at a little narrow road from the main street, so it is difficult to find without knowing the existence of the shop.
Being away from the main street, it is also a quiet place and the interior is simple, so you can relax and enjoy having meal or tea.
The owner, Mr. Yokoyama, moved to Fukuoka after working in the Kanto area’s restaurant industry. After working at several restaurants in Fukuoka, he opened the cafe on March 27, 2020.
As you can see from the shop name, NICE plant-based cafe has a concept of “Plant-based” and does not use animal foods such as meat, fish, eggs, and other dairy products.
Even though, they offer and serve delicious meals and ice cream.
Rather than just denying animal foods, they want everyone, whether they cannot eat animal foods or have allergies to eggs or dairy products, to be able to eat the same food at the same table.
So all the menus can satisfy people, even it is made by only plant-based foods.
In addition, as the shop incorporates sustainability, they sell products made from natural materials, such as coconut shells and wooden straws.
Natural “junky” burger like meat
When the shop opened, it was affected by the coronavirus. First, they only had few customers. So they were mainly selling products through take-out (to-go) or delivery.
Because of this situation, the specialty hamburger of the shop was born.
When you imagine about the vegetable burger patty, you would think that it is using soy meat. But actually it is not.
The best feature of NICE’s hamburger is that the patty is mainly made of chickpeas.
For dishes such as falafel use raw chickpeas for its ingredients. But for patty, they use boiled chickpeas for emerging the best taste.
In this way, Menu development is being carried out after considerable research.
In addition, beets and tomato paste are added to the patties to create a color similar to real meat. Also cooked brown rice is mixed in to create a texture similar to that of eating meat.This patty has been made for 3 days.
If you eat it without knowing that is not using meat, you might mistake it for real one because of the visual and texture , so I definitely want you to try it once.
Of course, the tomato ketchup and mayonnaise-style soy milk sauce used are homemade because they are particular about it. Also, vegetables are from Itoshima city as much as possible. As for buns, they even order custom-made buns with germ and purchase them from Yokohama.
Delicious NICE cream with plenty of fruits
What you should definitely try after eating is “NICE CREAM”, which is not ice cream.
Dairy-free, vegetarian ice cream is made from soy milk and banana base.
It’s very tasty and you can feel it more delicious than ordinary ice cream because they are using plenty of fruits.

I ate “VERY BERRY”. That is used plenty of strawberries, blueberries and raspberries. As I did not taste like soy milk , so it was easy-to-eat and delicious.
So I felt that I want to eat NICE’s NICE cream again and try all kinds. That is not because it was dairy-free, but because it was very delicious.
The owner, Mr. Yokoyama has a passion about the shop, so I recommend that you enjoy talking with him when you go.
