I am currently working as an editor. However, I experienced working as a cook in restrunts, hospitals, and catering industry. Looking back now, I was connected to the Idea of Hala, since then.
At one point, few decades ago, I worked in a cafeteria at an auction site. More than 60% of the visitors to the venue were foreigners, including many Muslims (There were mosque in the venue as well). I remember many people asked me about the food we serve, the types of meat and whether they are Hala qualified.
At a certain time, the cafeteria becomes lively like a festival. Because the Indian restaurant next door to the venue served food for free. Indian dish, such as biryani, curry and sweet drinks were served to the visitors. Over 100 foreigners dressed in red turbans, garabayas and folk costumes gathered in the cafeteria, and everyone had a great time surrounding the same table. Now I learned about Muslim culture, it was a fast-starting Iftar.
Also, I remember that many participants were only eating curry from the Indian restrunt, eventhough there were choices of other food. As I study about Halal, I learned that they did not chose to eat curry, but they did not have a choise. I personally think that they wanted to try some of the Japanese food, if they had a chose. I still regret that moment, when I could not do anything because of the lack of information. “Inconvenience” of food is quite different based on their cultural background, and therefore, I understand now, that it is crucial to create an environment where all people can enjoy delicious meal, regardless of their backgrounds.
In Japan, Halal food is still a minority. Many people from Muslim background visit Japan, but they fell enconvininet about it. Japan Halal Business Association advocates in the halal business: HAVO (Halal, Organic, Vegetarian, Allergy).
The idea is to aim to create products and services that many people can eat and use, regardless of their religion and various backgrounds.
Seeking for delicious, safe and secure meal is commonly shared through the nations. The time demand us to find new ways of living that transcend borders and religions. We hope that Halal will help eliminate food inconvenience and contribute to the harmony of the world where you can respect, coexist, and co-prosper with a more liberal idea to eating and enjoying food.

Nokoniko halal mazemen & curry is a ramen restaurant which is a 4 min short walk from JR Akihabara station. It was originally a restaurant specializing in roast chicken, and it reopened as a ramen restaurant on January 22nd, 2021.
The owner is a Muslim from Sri Lanka and all the items on the menu are halal friendly. They specializes in soup-less noodles and curries and also offers some unique dishes.

This is a maze men (maze means mix and men means noodles) with flavors of rich soy sauce with a hint of Japanese broth and chill, topped with chicken.
Chewy noodles go very well with the rich soy sauce. You can chose the level of how hot you want it.

Created new unique soup-less halal ramen after learning from the owner of renown halal chiken broth ramen restaurant
The Owner Mr. Ajath is a Muslim from Sri Lanka. He was not in the food industry when he first met Mr. Saifullar from the renowned halal ramen restaurant Ayam-YA. They soon hit it off because they are both from Sri Lanka and Mr. Ajath decided to make a shift in his career. He learned about cooking and business skills from Mr. Saifullar and opened a restaurant specializing in soup-less noodles. All the items on the menu are halal friendly and they don’t serve alcohol. They offer unique ethnic side dishes from Asia besides the popular items such as deep-fried chicken. This is deep-friend gyoza with lots of chicken mince and chives. Crispy and juicy gyoza make great match with sweet chill sauce.
This is called samsa, made from chicken and onions wrapped in dough made from wheat flour which they make from scratch. The outer is very crispy whilst the filling is chewy, making this delicious samsa different to Indian samsa.
There is a non-alcoholic beer which goes well with ramen and deep-friend food. This is called “Ninja lager” from German, made from malt.
It looks like a normal beer, but it is a halal-certified non-alcoholic beer with 0.00% alcohol. They also offer other halal-certified non-alcoholic beverages such as plum wine.
There is a qibla mark on the ceiling which shows the dirrection of mecca. There is a mosque of Akihabara in front of the restaurant and there are always customers stopping by for ramen after praying.
Mr. Ajath says that he wants to help Muslim people who have much less choices for food here in Japan where there is not Muslim culture rooted. He learned designing at college so he made the advertisement such as the brochures and sign board by himself. It has been 6 years since he came to Japan and he is a young owner who speaks fluent Japanese. He is very friendly and chatty, makes you feel want to stay long. It is still quite rare to find soup-less halal noodle even in the heart of Tokyo, please come by to enjoy this beautiful dish!
