After working as a registered dietitian at a hospital / school for about 5 years, she stayed in 3 overseas countries (New Zealand, Ireland, Australia) for a total of 4 years. Having met a vegan vegetarian friend there, she deepened her learning not only about food, but also about the environment and livestock issues. She has been living a vegetarian life since she was in Australia.
After returning to Japan, she was surprised by the lack of choices in Japan. Megumi once stopped her vegetarian diet because it was conditionally hard to continue. But she wanted to live based on her own philosophy and resumed an ideal vegetarian lifestyle.
When Megumi re-started a vegetarian diet, she often heard about problems such as eating out, having few choices, worrying about additives, and allergic ingredients. People seek to choose vegan but many are very worried about surrounding conditions in Japan. Megumi was definitely one of those who was worried about the same problems. Then, she wanted to do a job to support people who are in trouble because they are in the same situation as she is. So, she started the current vegetarian food service.
Polyphony, a restaurant opened in 2021 that offers alcohol and food pairings.
It is a 10-minute walk from Yotsuya Station on the JR Chuo and Sobu Lines and the Tokyo Metro Marunouchi and Nanboku Lines. Walk from the Akasaka Exit of Yotsuya Station toward the State Guest House, turn before Shinjuku Municipal Minamimotomachi Park, walk up the hill, and you will see Polyphony on the corner.
The restaurant is easily accessible from the station and is located in a quiet corner of a residential area in the heart of the city. They serve “Lacto-ovo vegetarian” food, which use vegetables, dairy products, and eggs.
Vegan options are available with reservations in advance.
Even though it opened in March 2021 in the middle of pandemic of Covid-19, the restaurant has been very popular that it gets fully booked for both lunch and dinner quickly.
The restaurant has a relaxed atmosphere where you can enjoy a relaxing time.
The restaurant is equipped with a power supply and Wi-Fi for customers who need to use thier computers.
In addition, the terrace seats provide a space where customers can enjoy time with thier pets.
In the midst of pandemic of Covid-19, you will feel like you’re traveling abroad with food from all over the world!
The restaurant’s focus is on pairing food with domestically produced drinks such as Japanese wine, sake, brandy, and fermented tea.
First, you will be given an explanation of the dish and the sake to go with it.
You don’t order your own sake, but rather they choose the one that goes with each dish of the day and serve it to you.
From the appetizers to the desserts, the dishes are artistic and make you feel as if you have traveled around the world.
All of them are delicately seasoned to bring out the beautiful flavors of the ingredients.
This is made possible by the fact that more than 90% of the ingredients are grown naturally, organically, or by using a little pesticides as possible.
The sake or Japanese wine served with the dish is a perfect match, and the food goes well with it.
The vegetables are domestically grown, but their origins vary. In fact, such as tomatoes, potatoes, corn, beans are all from Peru originally.
They incorporate these vegetables into the creative menu as a token of their appreciation for the country of origin.
First of all, I would like to introduce the dinner course that will make you feel like you have traveled around the world.
・Welcome soup
・Appreciation to the origin of vegetables – Peru
・Japanese folk traditions and new interpretations
・Greek vegetable and dairy food culture
・Vegetables and dairy products in Georgia
・The food culture of the Kingdom of Bhutan and the Japan’s food culture connected by the Terrestrial Forest Cultural Belt
・The history of Showa Kaoru Cafe – homemade white hard pudding with free range eggs for the blessings of Jomon
Next, I’ll introduce the lunch.
Dinner is a course meal only, but for lunch, you can enjoy items such as “the pasta of the day by chef’s choice” and “one soup and three side dishes” using fresh seasonal vegetables supplied on that day.
If you wish to have alcohol for lunch as well, they will provide you with a drink that suits lunch.
It is nice to be able to enjoy the marriage of alcohol and food not only for dinner, but also for lunch.
Support farmers while enjoying beautiful food and drinks.
I asked the chef and the hall manager about what inspired them to open this unusual concept of pairing lacto-ovo vegetarian food with domestically produced sake.
The first thing was, “We want to support Japanese farmers.”
All the drinks we serve are domestically produced, such as Japanese wine, sake, brandy, and fermented tea.
For the sake in particular, they carefully select and serve the most delicious ones that are not yet known to the public instead of choosing the most famous and popular brands. They are very particular about the sake they serve, so they even stop serving brands once they have become popular and well-known.
More than 90% of the ingredients are naturally grown, organically grown, or have reduced use of pesticides, and they hope to eventually make it 100%.
Secondly, “We want to make a comfortable restaurant where male customers who like vegetables can casually enter and enjoy drinks.
Many people seem to have stereotype that vegan and vegetarian restaurants are mostly for women, and male are hesitant to enter. In fact, the concept of the restaurant was inspired by the chef’s own experience of wanting to make a restaurant where even men can comfortably enter to enjoy vegertable dishes.
I wondered if there would be some customers who would be disappointed if there were no meat dishes available to go with their drinks. However, my doubts were unfounded.
Even on the next day after drinking alcohol, lots of customers feel lighter.
If you want to enjoy a flexitarian meal and drinks in a casual atmosphere, please give it a try.
