I am currently working as an editor. However, I experienced working as a cook in restrunts, hospitals, and catering industry. Looking back now, I was connected to the Idea of Hala, since then.
At one point, few decades ago, I worked in a cafeteria at an auction site. More than 60% of the visitors to the venue were foreigners, including many Muslims (There were mosque in the venue as well). I remember many people asked me about the food we serve, the types of meat and whether they are Hala qualified.
At a certain time, the cafeteria becomes lively like a festival. Because the Indian restaurant next door to the venue served food for free. Indian dish, such as biryani, curry and sweet drinks were served to the visitors. Over 100 foreigners dressed in red turbans, garabayas and folk costumes gathered in the cafeteria, and everyone had a great time surrounding the same table. Now I learned about Muslim culture, it was a fast-starting Iftar.
Also, I remember that many participants were only eating curry from the Indian restrunt, eventhough there were choices of other food. As I study about Halal, I learned that they did not chose to eat curry, but they did not have a choise. I personally think that they wanted to try some of the Japanese food, if they had a chose. I still regret that moment, when I could not do anything because of the lack of information. “Inconvenience” of food is quite different based on their cultural background, and therefore, I understand now, that it is crucial to create an environment where all people can enjoy delicious meal, regardless of their backgrounds.
In Japan, Halal food is still a minority. Many people from Muslim background visit Japan, but they fell enconvininet about it. Japan Halal Business Association advocates in the halal business: HAVO (Halal, Organic, Vegetarian, Allergy).
The idea is to aim to create products and services that many people can eat and use, regardless of their religion and various backgrounds.
Seeking for delicious, safe and secure meal is commonly shared through the nations. The time demand us to find new ways of living that transcend borders and religions. We hope that Halal will help eliminate food inconvenience and contribute to the harmony of the world where you can respect, coexist, and co-prosper with a more liberal idea to eating and enjoying food.

Safei Lanzhou Beef Noodles is a Chinese local cuisine restaurant located about 5-minute walk from Ikebukuro Station.
Lanzhou ramen noodles was founded in Lanzhou, the capital city of Gansu Province in China. It is Lanzhou’s national food that has beef bone broth soup with hand-made chinese noodles made from wheat flour.
There are lots of Muslims living in this area, you will find signboards of “Seisin” everywhere. Lanzhou ramen noodles are one of Seisin food and uses Halal ingredients.
The difference between Japanese ramen noodles and Lanzhou ramen noodles is, all things aside, the hand-streched noodles made by highly skilled chef. At almost all Lanzhou ramen noodle restaurants in Japan, they start making noodles afer taking an order.
You can choose your favorite noodles from 6 shapes and textures of noodles.
The master chef making noodles is a must-see. He turns the dough into different types of noodles such as flat ones and thin ones by stretching the dough. Every time he stretches it, he multiplies the number of noodles and it all happens in a few seconds!
The chef-owner of Safei is Muslim from Hui group in China. He learned making noodles from his parents as a child.
Lanzhou beef ramen noodles use rich soup made from beef born broth, with hand-made noodles in it, topped with beef shaves, raddish, chili oil, corianders and young leaves of garlic.
The chewy fresh noodles are equally streched and put into a bowl. The medicinal soup, which is simmered with 10 kinds of herbs and beef bones, is aromatic with a mild taste and it heals your body and mind.
The recommended dish is Lanzhou beef noodles while they serve other beef noodles such as stewed noodles, sour and chili flavored noodles with pickled Takana mastard and so on.

Safei Lanzhou Beef Noodles has 2 floors. The 1st floor is just like an ordinary ramen noodle restaurant, while the 2nd floor is quite different, which has exotic and luxurious atmosphere perfect for parties, dates, and dinners.
On the 2nd floor, there are some private rooms, in which Muslim customers can pray. Any Muslims can freely use these rooms for praying as long as they are available.
You can enjoy Lanzhou ramen noodles and variety of cuisine of northwestern China using Halal beef, mutton, and chicken.
Dapanji, stewed chicken and potatoes seasoned with chili peppers and spices, is a popular dish served with thin and flat noodles.
The buns filled with ground beef are Xinjiang style. In northwestern China, including Autonomous Region of Xinjiang Uygur and Ningxia, cookings made from mutton and flour are famous.

Lanzhou beef noodles was created at the end of Qing period, more than 100 years ago.
The dishes are seasoned to suit Japanese taste, that is mild, not too hot.
