After working as a registered dietitian at a hospital / school for about 5 years, she stayed in 3 overseas countries (New Zealand, Ireland, Australia) for a total of 4 years. Having met a vegan vegetarian friend there, she deepened her learning not only about food, but also about the environment and livestock issues. She has been living a vegetarian life since she was in Australia.
After returning to Japan, she was surprised by the lack of choices in Japan. Megumi once stopped her vegetarian diet because it was conditionally hard to continue. But she wanted to live based on her own philosophy and resumed an ideal vegetarian lifestyle.
When Megumi re-started a vegetarian diet, she often heard about problems such as eating out, having few choices, worrying about additives, and allergic ingredients. People seek to choose vegan but many are very worried about surrounding conditions in Japan. Megumi was definitely one of those who was worried about the same problems. Then, she wanted to do a job to support people who are in trouble because they are in the same situation as she is. So, she started the current vegetarian food service.
OYATSUYA Cache Cache, a snack shop playing hide-and-seek in a residential area
As you walk along the path in the residential area of Kuki City, Saitama Prefecture, you will notice the signboard. It Introduces a snack shop a few steps away.
The name of the restaurant, “Cache Cache,” is a French word. It means “hide and seek,” and as the name suggests, it is a snack shop with a small and comfortable atmosphere in a slightly hidden place.
Opened in October 2016, this shop is loved by locals and is celebrating its 4th anniversary this year.
The shop is runned by a friendly manager with a nice smile and a gentle atmosphere.
Although it is a small shop, using the part of the owner’s house, they are very particular about the ingredients. Basically, butter and white sugar are not used as ingredients. They are using wheat flour from Saitama prefecture, domestic rapeseed oil, and fertilized organic eggs. We can see the commitment of the owner to make safe and secure snacks. They select and use pesticide-free and organic products as much as possible.
Muffins, scones, tarts, and cookie dough are basically animal-free. Depending on the flavor, there are chocolates and cheeses, so in that case it is vegetarian. Butter is used for some parts such as quiche fillings.
The snacks lined up in the store changes daily. It’s nice that you can choose a different snack each time you visit the store.
“Snack” that is close to your everyday life
I interviewed the owner about thoughts to cooking:
We make simple and body-friendly “snacks.” It is not a sweets that you eat for a special day, but a snack that is close to everyday life.
When you try to eat different things in your community, like friends and families, it might create walls and change your relationships. Our goal is to bake delicious snacks that everyone can enjoy, regardless of their allergies and food choices.
People with allergies who can’t eat even if they want to eat, vegan vegetarians who choose not to eat by their thoughts, people who eat anything, etc… there are many kinds of people, but I think it is very important to eat the same food in the same space in order to construct a relationship.
It seems that some of the customers who bought snacks said that the cookies they bought for children with egg allergies were so delicious that they just ate them all, before giving to the children.
Ideally, I would like to make something that is delicious, no matter who eats it.
I want children with allergies to think that, “I can eat such delicious food even if I have food allergy,” instead of “I can’t eat delicious food because I have food allergies.” This is what I think about every day, when I baking snacks.
A wide variety of animal food-free snacks. Very friendly to vegans!
I bought three kinds of snacks that do not use animal products, which is vegan friendly, and can be eaten even with egg / milk allergies.
Those are, Tofu muffins with salted koji, tofu muffins with caramel nuts,and banana and grain coffee tart.
I went home and had a relaxing time with my family because it was a to-go and online shopping specialty store.
First I tasted the salted tofu muffin. The chewy texture, the gentle and simple sweetness that can be eaten as breakfast, and the slight saltiness of salted koji were very impressive and appetizing.
Next, I had a caramel nut tofu muffin.
Again, the muffin dough is simple and has a slight sweetness, but it is not salty. The moderate sweetness of the caramel on the top and the aroma of the nuts were exquisite.
Finally, banana and grain coffee tart. You can feel the natural sweetness with plenty of bananas. Since it is grain coffee, it does not have the bitter taste of coffee beans, so even children can eat with confidence.
Allergies, vegans, vegetarians … I can see such a scene that everyone can smile together saying “this is delicious.”
The store is a little far from the nearest station, but currently it sells snacks at its online shop. Those who are far away can buy snacks online using carefully selected ingredients that are as safe and secure as possible.
