Manoya is a part of JAC Co.Ltd., that operates industrial waste disposal and recycling. The business include recycling resource, agricultural production, operation of lifestyle shop, upcycling production(※1), and sales.
They work on “7th industrialization of recycling(※2) ” which cooperate and co-create with local administration, companies, and individuals beyond boundaries in order to provide the products with local values to consumers.
※1 Unlike recycling and reusing, upcycling means turning old and unnecessary things into something new with innovative ideas instead of disposing them, whilst making a good use of the original shape and characters and so on. It is a sustainable thinking of “turning rubbish into treasure”. (Reference:Japan upcycling association website)
※2 Project of the 6th industrialization of “production→procecssing→sales” based on recycling resource with addition of “circulation of value creation by cooperation with local community”.

There is “Mulberry rice” made with locally grown mulberry in the restaurant, for an example. Deoxynojirimycin (DNJ) contained in the leaves of mulberry is believed to suppress the blood sugar spike after a meal. When I was there for this interview (November, 2020), there was manuka honey wine made in New Zealand available for a limited period. There are some other delightful seasonal items on the menu throughout a year.

“Vegetable sandwich with soy ham” has juicy meat-like soy ham and plenty of seasonable vegetables sandwiched in chewy wholemeal buns. The rich sauce made this simple vegan sandwich so satisfying and delicious.

Food educational booth “Soy ham vegetable sandwich” & cafe “Soy amazake (Matcha)”
“Vegan amazake” made with amazake (traditional fermented rice drink) and soy milk is a unique drink which can be enjoyed by people of all ages.
