Grew up watching her grandparents’ agriculture from an early age and was drawn to the charm of fresh vegetables. Longing for a job related to food, she entered the University of Nutrition Science. Upon graduation, she worked as a registered dietitian in school lunch management.
After that, she studied abroad in New Zealand, which is rich in nature, and was fascinated by the vegetarian and vegan dietary styles of the local people who coexisted with nature. Then Arisa worked at a local vegan cafe and was impressed by the fact that they make such delicious food without using any animal ingredients/products.
However, after returning to Japan, she realized the low awareness of Japanese people about vegetarian, vegan, and halal foods.
Therefore, Arisa strongly believes that if more Japanese people know about vegetarian, vegan, and halal food, it will be even more important in the future from the perspective of food sustainability, which is closely related to environmental issues.
Currently, while working as a registered dietitian at a clinic, she recommends vegetarian and vegan orientation while supplementing necessary nutrients based on her knowledge as a molecular nutrition counselor.
The reason for starting the shop
Cafe Olu Olu is run by two women co-founders. They have been running this shop for about 10 years.
The reason why they started “Macrobiotic Cafe” is because they want to help people who are suffering from their children’s allergies.
As for the management of the shop, they cover everything from menu development to cooking, customer service, and cleaning.
As eating habits are diversifying and eating styles are changing, they want as many people as possible to feel the goodness of traditional Japanese food through the cuisine of Cafe Olu Olu.
They also said, “our target customer is people with allergies and those who do not eat animal foods, but we also want the general people to try our food as well.”
Commitment to ingredients, menu, and nutritional balance
The main ingredients of dishes are vegetables, so they use locally-sourced organic and pesticide-reduced vegetables.
To accomplish this, they buy vegetables directly from trusted contract farmers.
By choosing and using delicious seasonal foods, they provide nutritious meals.
In addition, there is a deep commitment to the menu. Since they do not use any animal products, the ingredients that can be used are limited.
But they combine ingredients that can take protein and high-quality fat. They are trying not to be biased to specific nutrients, and trying to create seasoning that feels delicious no matter who eats it.
There is also a kids plate for children, and the dessert “soy milk pudding” is to be very pleasing to children who are allergic to eggs and dairy products.
There are many repeater for their “handmade” products.The take-out menu is also substantial.
Handmade black sesame dressing, which is also used in the restaurant’s dishes, is solde at the shop, and there are many repeaters for it because it is delicious and good for the body.
In addition, organic whole grain cookies with oatmeal and any other products are also on sale.
The take-out (to-go) menu is extensive. For example, brown rice rice balls (¥ 400), daily lunch boxes (¥ 900) etc. and you can also order hors d’oeuvres according to the number of people and budget.
