The world first Reimen cold noodle specialty restaurant Tsurushiko is located a 10 min walk from Shibuya station, which is about an half way between Shibuya station and Ebisu station along Meiji street. What makes Tsurushiko special is that they have established a new category “Tokyo reimen cold noodles,” without using artificial seasonings, offering some vegan items on the menu, and have a wide variety of products available at their online shop. But first and foremost, “the food is so delicious!” It may sound cliche, but they have changed the image of reimen cold noodles. Reimen cold noodles tend to be considered as a side dish at BBQ restaurants for example, I never thought about choosing a restaurant for delicious reimen noodles. It was very rich and fragrant with lots of flavors, like you wouldn’t believe that it is plant-based soup. All the Tokyo reimen noodles are cooked with this vegetable soup. It is not only the soup which makes Tokyo reimen noodles special. As the restaurant name suggests, the noodles have distinct characteristics, which set them apart from Chinese noodles typically used in ramen dishes. The Tsurushiko reimen cold noodles was created with a method of bringing out the natural flavors by a representative Mr. Choshi who learned microbiotic cooking. In microbiotic philosophy, simple plant-based ingredients are used instead of animal products as plant-based food is considered to be more gentle on the body. As a core of creating noodle dishes without using any artificial ingredients, they are very particular about the quality of water. That is the very reason why Reimen dining Tsurushiko factory is based in the town of Iwaizumi in Iwate prefecture. The area is famed for its excellent natural spring water, which is ranked among the top 100 springs in the country. At the facility in the town of Iwaizumi, local artisans prepare the ingredients according to time honored methods that allow natural flavors that appeal to our senses to come through.
Mr. Choshi originally started the journey with Iwate’s soul food “Morioka reimen,” then ended up creating “Tokyo reimen” after trials and errors to bring out the deliciousness of vegetables. He felt the “potential of reimen cold noodles to succeed worldwide.” Reimen dining Tsurushiko has been loved by a wide range of customers ranging from foreigners especially who are vegans, customers who love authentic Morioka reimen, and families with young children.
